Thaw frozen marinated pork belly in the fridge overnight or under cold running water for immediate use.
Grill (Traditional Method)
1. Preheat grill to medium-high heat (about 375°F to 400°F).
2. Remove the pork belly from the marinade and shake off any excess.
3. Place the pork belly slices on the grill.
4. Grill each side for 4–6 minutes, or until the pork is cooked through and has a nice char. The internal temperature should reach 145°F (63°C).
5. Remove the liempo from the grill and let it rest for a minute before slicing.
6. Serve with dipping sauce (vinegar with garlic, soy sauce, or a spicy sauce), rice, and a side of fresh vegetables.
Air Fry
1. Preheat air fryer to 375°F (190°C) for 3–5 minutes.
2. Lay the pork belly in a single layer in the air fryer basket. Avoid overlapping for even cooking.
3. Cook the pork belly at 375°F for 12-15 minutes, flipping halfway through for even browning.
4. If you want the pork belly to be crispier, cook for an additional 2–3 minutes or until golden brown.
5. The internal temperature should reach at least 145°F (63°C). If the pork needs more time, cook in 2-minute increments until done.
6. Once done, let the liempo rest for a minute before slicing.
7. Serve with dipping sauce (vinegar with garlic, soy sauce, or a spicy sauce), rice, and a side of fresh vegetables.
