Thaw frozen marinated chicken inasal in the fridge overnight or under cold running water for immediate use.
Oven
1. Preheat oven to 375°F (190°C).
2. Place the chicken legs on a baking tray lined with foil or a baking rack to allow air circulation.
3. Bake the chicken for 35–45 minutes, depending on the size of the legs, turning once halfway through cooking.
4. For extra crispness and caramelization, switch to broil for the last 2-3 minutes of cooking (optional).
5. Let the inasal rest for a few minutes before serving with rice, atchara (pickled papaya), and toyomansi (soy sauce with calamansi).
Grill (Traditional Method)
1. Preheat grill to medium-high heat (around 375°F–400°F).
2. Grill the chicken over direct heat for 5–7 minutes per side, then move to indirect heat (or lower the flame) and continue grilling for another 20–30 minutes until fully cooked.
3. Flip every 10 mins for even cooking.
4. The chicken inasal is done when it reaches an internal temperature of 165°F (74°C) and has a nice char on the outside.
5. Let the inasal rest for a few minutes before serving with rice, atchara (pickled papaya), and toyomansi (soy sauce with calamansi).
Air Fry
1. Preheat air fryer to 375°F (190°C) for about 3–5 minutes.
2. Place the chicken quarter legs in the air fryer basket in a single layer. Avoid overcrowding.
3. Cook at 375°F for 20–25 minutes, flipping halfway through cooking.
4. The internal temperature should reach 165°F (74°C). You can continue air frying for another 2–5 minutes if the chicken needs more time or crispiness.
5. Let the inasal rest for a few minutes before serving with rice, atchara (pickled papaya), and toyomansi (soy sauce with calamansi).
